Red Apple and Black Cherry flavors lead with a Chocolate Brownie like Finish
Producer: Juan Jose Machicado
Place: Kantutani, Caranavi, Bolivia (1600m)
Process & Varieties: Fully washed Typica, Catuai, and Icatu
High on the "Cima del Jaguar" ("Peak of the Jaguar"), Juan Jose produces a classic example of Bolivian specialty coffee with organic Typica, Catuai, and now Icatu on steep and dense jungle terrain. The Kantutani colonia features three farms linked by the Luque family who experienced early success in the Cup of Excellence: Juan Jose's wife Lydia, her brother Euologio, and their other brother Braulio. Juan Jose is working toward improving both productivity and sustainability with the help of our sourcing and export partners at Invalsa, to lead with intentional dynamic farming in organic practices.
Typica and Catuai cherries along with the newly replanted Icatu are hand picked and washed on the family's hand cranked de-pulper and then fermented in a wooden box to be washed and dried on raised wooden tables for 15 days. This family and farm are perfect example of the kind of farmers and communities we are drawn to working with—full of love, hope, and potential. This wild but refined coffee presents classic Bolivian lower acidity and flavors of smooth chocolate but with a juicy apple and stone fruit sweetness.
