Bourbon Rosado or “Pink Bourbon” is an emerging variety gaining significant traction and popularity in the Huila Department of Colombia for its pink color and fruited flavors. These candied flavors are also shaped by unique processing techniques that lengthen the fermentation process both before and after pulping with an end result that creates powerful aromas and flavors tasting almost like the artificial fruit flavors from your favorite childhood candies.

We discovered this Pink Bourbon lot through our sourcing partners at Azahar who identify pioneering producers in the Cadefihuila Pitalito cooperative with terroir and efforts that stand out as exemplary from the region. The original pink bourbon pioneer, however, is Don Gabriel Castaño, right here in Acevedo. While many producers in the region had the anomaly of pink cherries it was Don Gabriel who cultivated these unique trees discovering high yields, resistance to disease but also incredible cup qualities! We are thrilled to discover and connect with more families producing this exciting variety each year.
