The flavors of Sister Moon are naturally developed by quality varieties in fitting terroirs and moderate altitudes for sweet, classic coffee flavors of chocolate and caramel with moderate acidity for a cup that is sure to please everyone. Always clean and smooth, Sister Moon is a great "house coffee" that showcases our ongoing collaboration with producers in Latin America according to the season's harvests.

Danilo Pineda, the proprietor of El Lichoso farm located in the village of El Cedral in Santa Barbara, oversees a 2.1-hectare estate cultivating various coffee varieties, including Pacas, Bourbon, and Pacamara, at an elevation of 1650 meters. Inspired by a neighbor's encouragement, Danilo embarked on his coffee farming journey. Despite encountering hurdles like escalating production expenses, he perseveres with a steadfast dedication to innovation. In the near future, Danilo aims to enrich the farm's repertoire by expanding his Pacamara and adding Gesha.

Honduras Wil Armijo

Nestled at 1550 meters, Wil’s 12.6-hectare farm thrives with a unique blend of Pacas, Parainema, Geisha, and Catimor. Armijo, influenced by his family's coffee growing background in Yoro, acquired his farm in 1998.This coffee is washed, undergoing a 16-hour fermentation, and dried over 17-22 days.

 

Brewing Recommendations:

We recommend 1 part ground coffee to 15 parts filtered water (1:15)
Pour Over: 20g coffee med-fine | 300g water off boil | 3:00min duration
