The story of Finca Rustica is the kind we love to tell.
Ruben is a super motivated producer in San Ignacio among some of our longer standing partnerships.
His farm is incredibly steep and is situated a bit lower in altitude than some of his more established and successful neighbors like Pablo Yana and Porfilio Mamani from whom we’ve sourced stellar coffees for a decade. There is a real challenge here but Ruben keeps showing up with his giant smile and a small t-shirt.
First the coffees were just on the bubble of being acceptable for our quality standards. After faithfully following the advice of our agronomist friends each season there was a marked improvement.
The coffee made its way into our blends and now stands alone all grown up and ready to make new friends!

Traditional washing in wood fermentation tank after depulping and 8 hours of dry fermentation in tank. The wet parchment is sun dried on raised beds for 10-20 days. |
