David Lopez continues to impress at his Finca Los Amigos with this small plot of Pacamara plants named after the indigenous “tatascan” tree whose branches stretch above them.
Our friendship and partnership is growing deeper and as the clear potential I saw when we met was not only realized in short order within a few years at the outset but is now revealing itself in new expansive ways over a decade later. With plots like Tatascán, David is proving to quietly be a world-class producer.
When carefully prepared as a natural the often herbaceous Pacamara variety can transform its complexity into new fruit driven flavors and in this case a lovely and delicate structure and finish. I’ve fallen in love with this rare and limited lot and am thrilled you get to enjoy it!

Silt and loam soil over limestone on a bench of land in front of steeper terrain and forrest. The plot is shaded with trained Guama and Inga trees. |
| Process | Ripe cherries are picked at a burgundy red color over several passes and immediately taken to covered raised beds to dry for 14-21 days depending on the weather. |
